VeganMoFo – Day One
Today’s MoFo theme is – What is your favorite food? Mexican food is, and always has been, my favorite food. For day one, I made Mexican Pizzas. They are simple and quick to make. Just like tacos, you can build them to satisfy everyone in your home!
Here is what I used:
Eight tostada shells
TVP, or premade veggie crumble*
Vegan shredded cheese
Preheat the oven to 350 degrees.
Spread the beans on four of the tostada shells and top with a little bit of the seasoned TVP. Top the bottom layers with another tostada shell. Add a little more of the seasoned TVP and sprinkle the vegan shredded cheese on top. Bake for the pizzas for 10 minutes or until the cheese is melted. Top the pizzas with shredded lettuce, diced tomatoes, hot sauce/salsa, and guacamole. You can even try vegan sour cream on top!
*Textured Vegetable Proteins/TVP are used in place of the ground meat in this recipe. To use, rehydrate 1 cup of dried TVP in 1 cup of hot water. Just let soak for about 10 minutes and drain off any excess water. I usually add taco seasoning to the TVPs while they are rehydrating. I find they have more depth of flavor this way. From here use them just as you would ground meat in a recipe. – add more taco seasoning and cook for 7-10 minutes on med/high heat.
