VeganMoFo – Day One

VeganMoFo – Day One

Happy November 1st – Day one of Vegan Month of Food (MoFo) and World Vegan Day!  VeganMoFo is a celebration of vegan food around the world. There are daily themes, but the posts can be about anything food related. You can follow along here, FacebookTwitter, and Instagram. You can also follow the hashtags #VGNMF16 and #VEGANMOFO. Are you ready to get started?! I am!

For me, being vegan isn’t just about eating a vegan diet. It is about embracing and living my values each day. It is about living compassionately and purposely. Not just for myself, but for all beings and our earth.

Today’s MoFo theme is – What is your favorite food? Mexican food is, and always has been, my favorite food. For day one, I made Mexican Pizzas. They are simple and quick to make. Just like tacos, you can build them to satisfy everyone in your home!

Here is what I used:
Eight tostada shells
Refried beans*
TVP, or premade veggie crumble*
Taco seasoning
Vegan shredded cheese
Hot sauce
Diced tomatoes
Shredded lettuce

Preheat the oven to 350 degrees.
Spread the beans on four of the tostada shells and top with a little bit of the seasoned TVP. Top the bottom layers with another tostada shell. Add a little more of the seasoned TVP and sprinkle the vegan shredded cheese on top. Bake for the pizzas for 10 minutes or until the cheese is melted. Top the pizzas with shredded lettuce, diced tomatoes, hot sauce/salsa, and guacamole. You can even try vegan sour cream on top!

*Refried beans – I make my beans at home using an Instant Pot (electric pressure cooker/multicooker). I stopped buying canned beans after I found out how cheap and easiest it is to buy from the bulk section and make my own. I pressure cooked two cups of dried pinto beans with 1/4 of a diced onion and three cloves of garlic for 25 minutes. Once they cooled, I mashed them, added salt & pepper, and little extra seasoning.

*Textured Vegetable Proteins/TVP are used in place of the ground meat in this recipe. To use, rehydrate 1 cup of dried TVP in 1 cup of hot water. Just let soak for about 10 minutes and drain off any excess water. I usually add taco seasoning to the TVPs while they are rehydrating. I find they have more depth of flavor this way.  From here use them just as you would ground meat in a recipe. – add more taco seasoning and cook for 7-10 minutes on med/high heat.
