Vegan MoFo – Day Thirteen


Today’s theme is hilarious! Feed the Alien – An alien lands on your doorstep. What are they going to eat? This topic was fun to brainstorm. I thought about soup, tofu scramble, and eventually decided a bowl of granola and fruit would be best to feed the weary alien. It is healthy, filling, and delicious. Everything an alien needs after a long journey!

​You can have fun with this breakfast (or make it lunch or dinner!) by switching up the granola flavor, fillings, fruit, and nondairy milk. This morning, I used vanilla and almond granola. I topped it with sliced strawberries and whole fresh blueberries. I topped the granola and fruit with unsweetened almond milk. 

I also enjoy pomegranate seeds, sliced peaches, and sliced bananas. Tiny pieces of diced apples dusted with cinnamon is also delightful. Try switching up the types of nondairy milk. Each one has a distinct flavor. Try coconut milk, rice milk, soy milk, hemp milk, or hazelnut milk! Seriously, the combinations of granola, fruit, and nondairy milk are endless! It promises never to be a boring meal.
