Chickpea & Avocado Picnic Smash

Ingredients

  • 1 15 oz can chickpeas drained and then rinsed or 1 1/2 cups of cooked chickpeas
  • 1– 1 1/2 medium ripe avocados, mashed or 1 large ripe avocado, mashed
  • 1/4 tsp onion powder (or 1/4 tsp grated onion)
  • 1/4 tsp garlic powder (or 1/4 tsp grated garlic)
  • 2 tbsp lemon juice
  • salt & pepper to taste

Instructions

  • Mash avocado(s) in a medium-sized bowl.
  • Add drained and rinsed chickpeas to mashed avocado(s).
  • Add lemon juice, onion, garlic, salt, and pepper to the mixture.
  • Fold all ingredients together until well combined. Taste and adjust seasoning as desired.
  • Serve on lightly toasted bread with arugula and sprouts. Assemble sandwich by spreading a few tablespoons of mixture on one slice of bread. Top with a little bit of arugula and sprouts. Squeeze a little bit more lemon juice and a small pinch of salt on the greens before topping with the second slice.

Notes

You can also lightly mash the chickpeas before adding them to the avocado, and then it makes a great cracker topping or dip!
