Best of March….

I received many great comments about the Best of February meals, so I wanted to share the best of March (and the months going forward)! March was a busy month for my family, but we managed to find time to have quality time around the dinner table. Here are my top meals in March…
1. Country Plate
I traveled to Texas in March to visit my family. Upon my arrival, my dad had a huge pot of homemade navy beans waiting for me. They were delicious on their own, but they were great when paired with cheesy tofu and roasted Brussels sprouts. This is just one of the many perks of visiting family!
2. Mac n Trees
I finally perfected my basic vegan cheese sauce. The best part of the recipe is that the blender does most of the work, and it only requires a few ingredients. Plus it can be changed up to create different flavors! Try adding a little bit of taco seasoning and salsa to create a nacho cheese dip or even to top your nachos.
3. Tofu Omelet
I’ve been working on this recipe, both for the omelet and the tempeh bacon, for a few weeks and it is almost ready to share! I used to struggle with making an omelet batter that could be poured onto a griddle or in a pan, struggle to flip it, and then have to keep one warm while another is cooking. Now cook them in the oven while I prep and cook the filling! It cut my time in half, and they have turned out so well each time. The recipe to come soon!
4. Salad with Homemade Green Goddess Dressing
I recently went to a recipe tasting hosted by a friend of mine. She made a Green Goddess Dressing that was so good! I was able to take home the leftover dressing and used it on my salad the next day. Check out her recipe on the Food Empowerment Project’s website!
5. Peanut Butter and Blueberry Smoothie
This is my go-to smoothie for breakfast or lunch, as it has the right amount of peanut flavor to blueberry. It is entirely reminiscent of that favorite childhood sandwich! You can get the recipe here.
6. A Picnic with a View!
Picnics are one of my favorite things to do with my husband. This was from a recent trip to the Oregon Coast for a camping trip. We stopped at Ecola State Park in Cannon Beach, OR for lunch and walk in the park!
7. Campfire Cooking
Well, this wasn’t cooked over a campfire, but totally could be! I made this chili at home the day before and reheated in our cabin at Ft. Stevens State Park near Astoria, OR. My husband and I try to go camping a few times each year, so this was a great way to start off camping season!
